Tonight we had curried chicken with brown rice and peas. The kids asked for seconds which always makes me feel good. You can find the recipe on Meal Plan 3. I made a few changes. I doubled the sauce. So I used 2 cups coconut milk, 3 T curry, 2 t chicken granules. This was not spicy at all....just had great flavor! The chicken was super tender and fell off the bone. I cooked it on low in the slow cooker for 6-61/2 hours. Hope you try it....let me know what you think.
